Weekly Menu -- May 14 through May 20

The weekend absolutely flew by and now we're into a busy week (again!). This weekend is really a nothing-special week, meal-wise, but there are a few favorites here and there. Wednesday's Pumpkin Chocolate Chip Bars are a favorite, even among Doug's co-workers, who actually ask for them occasionally. So the recipe is below. And the hot roast beef sandwiches on Thursday are yummy, and easy, so that recipe's also below.

Monday
Lunch: on the run after the orthodontist appt.
Dinner: Sausage, colcannon (Irish potatoes -- I use the Joy of Cooking recipe, but this is similar; I use green onions, more butter and milk), biscuits, leftover cheesecake

Tuesday
Lunch: Scrambled egg sandwiches
Dinner: Spaghetti and sauce with Italian sausage, salad, bread pudding

Wednesday
Lunch: Ham and cheese sandwiches
Dinner: Matzo ball soup, bread, Pumpkin chocolate chip bars

Thursday
Lunch: Bagels and cream cheese
Dinner: Roast beef and onion sandwiches, cole slaw, Butterscotch pudding

Friday
Lunch: Split pea soup
Dinner: Cheese quiche, salad, quick breads

Saturday
Lunch: Skyline Chilitos
Dinner: Pizza, salad, fried dough

Sunday
Lunch: BLTs, chips
Dinner: Cilantro Chicken Enchiladas, spicy rice, cabbage, tomatoes, avocado, Strawberry shortcake
