Weekly Menu -- 3/5 through 3/11

This week's star (so far) was tonight's dessert -- Lemon Frosted Cookies. These cookie's are nothing to look at, but they are sooooo good. They are light, crunchy and buttery and the icing makes them sweet and tangy (ooooh, I sound just like Giada!). The recipe, compliments of Land o' Lakes, is below. Sorry if you're fasting from sweets. Hang onto the recipe--they'll be perfect for Easter. Monday night's dinner was good because today Anthony got Phase 2 of braces and he's hurting.

The other star this week will be Baked Steak on Sunday. It's a six thumbs up, so the recipe is below.

Monday

Lunch: ham sandwiches and chips

Dinner: Paula's chicken and dumplings, applesauce, Lemon frosted cookies


Tuesday

Lunch: Egg sandwiches

Dinner: Turkey and Wild Rice Casserole, cauliflower, bread, milk shakes


Wednesday

Lunch: Pancakes and bacon

Dinner: Teriyaki Pork chops, roasted sweet potatoes, fruit, Carrot cake cupcakes


Thursday

Lunch: Chicken wraps
Dinner: Minnesota Wild Rice Soup, bread, fruit, leftover Carrot cake cupcakes


Friday

Lunch: Tomato soup

Dinner: Tuna Melts, chips, cole slaw, Jelly roll cake


Saturday

Lunch: Skyline Chili (Saturday regular)

Dinner: Homemade pizza (also Saturday regular)

Sunday

Lunch: Sausage gravy and biscuits, eggs

Dinner: Baked Steak, mashed potatoes, vegetables, bread, Creme Brulee


Lemon Frosted Cookies


Cookie ingredients:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 cup Unsalted Butter, softened

2 eggs
1 tbsp freshly grated lemon peel
1 tbsp lemon juice
1 1/2 teasp cream of tartar
1 teasp baking soda
1/4 teasp salt

Frosting Ingredients:
2 1/2 cups powdered sugar
1/4 cup lemon juice

Heat oven to 400°F. Combine all cookie ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 6 to 8 minutes or until edges are lightly browned.

Meanwhile, combine all glaze ingredients in small bowl; stir until smooth. Frost warm cookies with glaze. Sprinkle with additional lemon peel, if desired.


Baked Steak with Tangy Tomato Sauce

Makes 6 servings

2 lbs. round steak
1/2 t salt
1/2 t pepper
3 T shortening
1/3 cup onion, chopped
1/3 cup celery, chopped
1 clove garlic, minced
2 T brown sugar
2 t yellow mustard
2 T worchestershire sauce
2 t lemon juice
dash Tabasco sauce
1 cup undiluted tomato soup

Tenderize steak with meat mallet. Salt and pepper meat. Brown meat, onion, celery and garlic in hot shortening. Add remaining ingredients and cover. Simmer for 15-20 minutes.

(To freeze: cool completely and freeze in freezer bags. Thaw completely and continue as below.)

Bake, covered, in 350 degree oven for 1-1/2 to 2 hours or until tender.
