Chocolate Chip Biscotti Cookies

It's about time to start baking and I want to share some cookie recipes.
Here is a recipe for a biscotti that's not too hard. Just crisp enough.

Chocolate Chip Biscotti
1 cup sugar
1 cup oil
3 eggs
3 cups flour
2 t baking powder
¼ t salt
1 t vanilla
½ cup choc. chips

Mix oil and sugar with a wooden spoon. Stir in eggs, one at a time. Add flour, baking powder and salt. Stir in vanilla and chips. Refrigerate for one hour. Heat oven to 350. Grease two cookie sheets. Cut dough into four parts and form each into a 10-inch log. Place two logs on each sheet; sprinkle with sugar. Bake 20 minutes. Cool; cut into 3/4-inch slices. Arrange flat side down and bake for 18 minutes.
